Here are some ways to put an interesting lunch together:
1. Sandwiches
Use your grain budget to make a sandwich or half-sandwich. Or, alternatively, make a sandwich out of grilled slices of eggplant or zucchini, or use any large green leaf for wrapping.
2. Soups
A cold soup on a hot day always refreshes, and a hot soup on a cold day is always satisfying and filling. Depending on the type of soup, it can be a whole meal by itself or it can be a delicious course.
3. Roll-ups
Roll deli meats, bacon, cheese and lettuces to make a sandwich without bread. If your budget allows, consider using store-baked meats to avoid eating foods made with nitrates, dyes, MSG or other chemicals.
4. Protein Salads
Make a salad with any kind of cooked protein and greens. Grill up some chicken, fish, pork, or beef on a Sunday afternoon and use it all week as a salad ingredient.
