Alternatives for Flour and Dairy

It's all about the fabulous fat-blasting fiber
The reason for avoiding most of the white or wheat flours commonly found in your neighborhood grocery store is because these flours have no fiber. It's all been removed through processing. This is why foods made with white flour or wheat flour are called highly processed. The lack of fiber results in a spike in your blood sugar, which results in a spike in your insulin production, which makes it hard for you to lose weight. This is the condition you're trying to prevent, and it's easy to do by choosing alternative flours or grains. There are many tasty choices available to you. Look for flours and grains that give you at least 3 grams of fiber per serving.

My basic muffin or bread batter is typically a combination of 100% stone ground whole wheat, wheat bran and flax meal. I like to use the flax meal because it's rich in omega-3 fats, which is a very healthy, essential fat to include in your diet. The reason for using 100% stone ground whole wheat and wheat bran is because they're familiar tastes and most people don't object to cooking with them. However, if you have glucose intolerance, wheat allergies, or if you simply prefer to cook without wheat, it's easy to substitute other flours or brans. Keep in mind that variations in your choice of flour may mean that more liquid needs to be added to the recipe and/or that it needs to cook a little longer. Keep adding liquid in one tablespoon increments until the batter is moist, and keep cooking in 5 minute increments until a toothpick inserted in the middle of the bread or muffin comes out dry and clean. These are simple changes that anyone can master. Use your own good sense and knowledge of cooking, and you'll do fine.
